Great to snack on or eat for breakfast, these oatmeal muffins are a recipe to try out. Even picky breakfast eaters will enjoy these healthy and tasty muffins! This recipe makes a dozen muffins.
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup applesauce
- 1 banana, mashed
- 1/4 cup honey
- 2 1/2 cups old fashioned rolled oats
- Optional: 1/8 cup chia/flax seeds
- 1 tsp ground cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
Preheat oven to 350 degrees.
In a bowl, mix egg, vanilla extract, milk, applesauce, banana, and honey.
Add in oats, chia/flax seeds, ground cinnamon, baking powder, and salt. Mix well.
Grease a muffin pan. I recommend using a silicone baking pan.
Divide mixture evenly using an ice cream scoop.
Add toppings such as fruit, or chocolate chips (optional).
Bake in the oven for 30 minutes.
Store in the refrigerator in an airtight container. Serving size is 2 muffins.
