I was looking for a cupcake recipe for a bake sale that was in season, easy and fun to make, and tasted good. These cupcakes are nice and moist, with just the right amount of sugar that it doesn’t taste overwhelming. I used the second cream cheese frosting recipe from my post Cream Cheese Frosting to balance out the sweetness. This recipe makes 24-27 cupcakes.
- 2 cups white granulated sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water
Preheat oven to 350 degrees Fahrenheit.
Add all ingredients except for the water, and mix well.
Stir in the water. This will make the batter very thin, but don’t worry.
Fill cupcake liners 3/4 of the way.
Bake for 18-22 minutes.
